JOB DESCRIPTION: Cafeteria Manager
QUALIFICATIONS:
- High School diploma or equivalent.
- Demonstrated aptitude for successful performance of the responsibilities listed below.
REPORTS TO: Food Service Director/Principal
JOB GOALS: To serve the students attractive and nutrition meals in an atmosphere of efficiency, cleanliness and friendliness; and to support the Mission Statement of the Estill County School System.
PERFORMANCE RESPONSIBILITIES:
- Plans school lunch and school breakfast menus according to meal pattern requirements and recommendations from the District School Food Service Director.
- Works with cooks in evaluating planned menus for meal pattern requirements, nutrient content, appearance and student acceptance in accordance with district standards.
- Plans maximum use of USDA donated foods.
- Maintains a standard recipe file and ensures the use of standardized recipes in food preparation and sees that standardized recipes are converted as needed to yield desired quantity.
- Directs the use of accepted procedures in the preparation of all foods to ensure palatability and nutrient content.
- Ensures the use of recommended methods in measuring or weighing ingredients.
- Supervises food production and meal service to assure that planned menus are used and that emergency substitutes comply with meal pattern requirements.
- Monitors production and service to ensure compliance with local and state Health Department sanitation regulations.
- Ensures that food is thawed, served and held at the correct temperatures.
- Works with cooks on effective merchandising techniques.
- Maintains menu and production records according to procedures established by the State Agency and school district policies.
- Plans effective use of leftover foods.
- Uses school district’s standard procedures, records and forms to requisition and/or purchase food, supplies and equipment.
- Receives food and non-food supplies in accordance with School District policies and checks invoices against original orders.
- Follows school district’ procedures for inspection of goods received for quality specified and for the return of unacceptable goods.
- Supervises and ensures proper storage of purchased foods, USDA donated foods and non-food supplies in accordance with storage requirements.
- Implements and supervises the appropriate inventory procedures for purchased foods, USDA donated foods, supplies and equipment as established by the school district and State Agencies.
- Supervises the activities of cafeteria workers.
- Organizes work assignments and schedules for all cafeteria workers and supervises the implementation of these assignments.
- Provides on-the-job training in such areas as the use and care of equipment, food production, sanitation, storage, record keeping and human relations.
- Maintains a financially sound program.
- Ensures that all financial management procedures assigned are carefully followed.
- Completes all assigned daily records and reports accurately and submits all required reports to the district central office on a timely basis.
- Supervises and trains workers in the use and care of equipment.
- Requests repairs and replacement of equipment as needed.
- Inspects refrigeration and freezer units on a regular basis.
- Supervises the use of basic procedures required for the cleaning and sanitizing of work areas, utensils and equipment.
- Establishes a routine cleaning schedule and checkup system complies with requirements as specified by local and state Health Departments and school district policies.
- Establishes an effective insect and rodent control system according to school district procedures.
- Develops an effective system of garbage and refuse disposal and storage according to school district procedures.
- Identifies potentially hazardous areas and takes appropriate preventive measurers.
- Follows school district’s first aid procedures.
- Knows procedures for the use and operation of fire extinguishers for each type of fire.
- Reports accidents and refers potential safety hazards to the District School Food Service Director and/or School Administrator.
- Promotes a program of nutrition education and cooperates with teachers in implementing the district-wide Nutrition Education Plan.
- Works with students, parents and teachers in implementing the school district’s student and parent involvement program.
- Keeps students, teachers and parents informed of daily/weekly menus and the services provided by the school food service program.
- Participates in local school district in-service meetings and training programs for school food service personnel.
- Participates in area, state and national workshops and other professional growth activities as opportunities are made available.
- Participates in professional association activities.
- Maintains confidentiality of students and/or staff.
- Performs other duties as assigned by the Food Service Director.
